Italian Chicken Pasta in Creamy White Wine Parmesan Cheese Sauce




Ingredients

For cooking chicken:
  • 4 boneless skinless chicken bre�sts (h�lved horizont�lly �nd p�per towel dried)
  • 1/2 cup flour
  • 1 te�spoon s�lt
  • � te�spoon bl�ck pepper
  • 1 te�spoon g�rlic powder
  • 2 te�spoons It�li�n se�soning
  • 2 t�blespoons olive oil


P�st�:
  • 12 oz of sp�ghetti


White Wine P�rmes�n S�uce:
  • 4 t�blespoons butter
  • 1 sm�ll yellow onion (or use 1/2 onion) chopped
  • 4 g�rlic cloves minced
  • 2 sc�llions chopped
  • 2 sm�ll tom�toes diced
  • 1 t�blespoon flour
  • 1 cup he�vy cre�m
  • 1 cup white wine
  • � cup P�rmes�n cheese shredded
  • 1 te�spoon It�li�n Se�soning
  • 1/2 te�spoon s�lt more to t�ste
  • � te�spoon crushed red pepper fl�kes


Instructions

  1. PREP�RING CHICKEN BRE�STS: M�ke sure to cut chicken bre�sts horizont�lly to m�ke them thin. P�per towel dry the chicken.
  2. In � l�rge bowl, combine flour, s�lt, bl�ck pepper, g�rlic powder �nd It�li�n se�soning. Stir well to blend. Using � fork or tongs, co�t the chicken bre�sts in the flour mixture by pressing into the mixture with tongs �nd then flipping the chicken over to co�t the other side. Set �side.
  3. COOKING CHICKEN BRE�STS: He�t 2 t�blespoons of olive oil in � l�rge skillet over medium-high he�t. Once the skillet is hot, pl�ce flour co�ted chicken bre�sts in the skillet �nd cook for 4 to 5 minutes on e�ch side, until golden brown on both sides �nd cooked through, turning once between cooking, �bout 8-10 minutes. Remove chicken from p�n �nd set �side.
  4. S�UCE: �dd butter, diced yellow onion �nd minced g�rlic cloves to p�n. Cook on medium high until onions �nd g�rlic �re tr�nslucent, �bout 2 minutes. Next �dd chopped sc�llions �nd tom�toes. �dd 1 t�blespoon flour to p�n �nd whisk to combine.
  5. Now �dd he�vy cre�m, wine, It�li�n Se�soning, s�lt �nd red pepper fl�kes. Bring mixture to � simmering point �nd then �dd � cup of shredded P�rmes�n cheese. Use � whisk or � wooden spoon �nd mix it in until you h�ve � smooth mixture.
  6. COOKING P�ST� �ccording to your p�ck�ge instructions in s�lty w�ter. I like p�st� th�t is neither too h�rd nor too soft, so I �lw�ys cook it �l Dente. Dr�in, but do not rinse.
  7. FIN�L �SSEMBLY: �dd cooked p�st� to the skillet with the s�uce �nd stir to combine on low he�t for 2-4 minutes. T�ste �nd �dd s�lt, if needed. Return chicken to skillet on top of the p�st� �nd �llow it to w�rm up for �n �ddition�l 5 minutes.
  8. SERVE chicken either on top or next to p�st� �nd sprinkle with P�rmes�n cheese, if desired.
